Our village, Opoul-Périllos, hidden in the south hillside of mountains Corbieres, is overhung by the last remains of a roman oppidum from which one watches over the horizon:
below the plain of Rivesaltes, famous for its Muscat sweet wine;
opposite, one can catch a fleeting glimpse of Spain and the snowcapped top of the mount Canigou.
An unusual vineyard,
a touch of greenness in an arid landscape. The vines are
surrounded with garrigue and swept away, all year long,
by the main wind, "Tramontane".
The vine,
unique and ancestral farming, is the only one with almond trees
able to grow i the stony and chalky soil,
where the water is so rare that it has its own festival.
Our vineyard,
we have chosen to keep it small, as a garden.
In that way, we can bring it all the attention and care needed.
The choice of an organic agriculture
is and evidence: we set our hearts on respect and protection of humans
and environment. Because we never forget that we are just momentary keepers of our lands.

that we entrust with wine-making.
Typical varieties
on this "Cotes du Roussillon Village" guaranteed vintage area.
Grenache, Syrah and "king" Carignan have each their specificities
of growing and taste under such a demanding climate.
Thanks to that, the wines we elaborate have plenty of character.
Our wines are made with the constant care of matter:
we harvest clusters by hand and hand pick the berries.
Musts ferment with Native yeasts and filtration is made by decantation.
These process require a constant rigour in order to guarantee
a final product of high taste and quality.
Flavours of selected varieties melt with harmony into the perfumes
of the surrounding garrigue.

It is the venerability of this Carignan vineyard
offers to wine tasters, at full maturity, the concentration and softness of its mellow berries.
The little touch of acidity brought by the chalky soil sustains and brings balance to the wine.

From the opening, the rich aromas of ripe fruit mixed with subtle licorice notes
Gain in expression the more the wine is aerated.
Its power and complexity are revealed in the palate, sprinkling its rosary of aromas:
Red fruits and rose petals for Grenache, licorice and cocoa for Syrah.
It fits wonderfully with meats

WHITE WINE
This wine is made from a piece of old white Grenache that winds along a rocky bar.
Bordered by wild olive trees, it overlooks the surroundings.
On closer inspection, there are some strains of gray Grenache, white carignan,
Maccabeu and vermentino which discreetly complement its aromatic palette.
The opulence of sun-kerned grains and the minerality of the limestone soil
will be refined a few months in barrels.
